This is a hand crafted washed rind cow's milk cheese that combines traits from Gouda and another Swiss variety called Appenzeller. It is delicately aged for 8 months on cedar wood planks, adding robust flavours to the cheese. It's creamy and rich with sweet overtones and distinctive eyes throughout the body, but with a very smooth, naturally smoky flavour.
Refrigerate for up to 6 months.
